[You may double, or even triple, as we did, the following receipe; just make sure you have a large enough container to cook the large batch in.]

INGREDIENTS ----------------------------------------------
7 Mangoes
3/4 cups Ginger, chopped
2 1/2 cups Raisins
3 stiks Cinnamon Sticks
15 Cloves, whole
3/4 tsp Coriander seeds
1/4 tsp Cayenne powder
1 tsp Salt
3 cups Sugar
2 cups Vinegar (Malt)
8 pint Jars with lids

DIRECTIONS -----------------------------------------------------

Note: familiarize yourself with canning proceedures.

Cook vinegar and sugar together for 5 minutes on medium heat.

Add all other ingredients, bring to simmer, and simmer for 90 minutes or until it reaches a medium thick consistency, stirring often to prevent sticking.

Sterilize 8 or 9 pint jars and lids.

Fill jars leaving 1/4 inch headroom and wiping any excess.
Process for 15 min in boiling water bath.
